Osaka arrives at the Mandarin Oriental

Nikkei cooking, thirty years old in Madrid, lands in the Gulf under the same roof as the hotel.

Nikkei is what happened when Japanese technique met the Peruvian pantry: the knife and the rice of one, the citrus, the chilli and the heat of the other. Osaka has been cooking it for decades, and in 2027 it opens at the Mandarin Oriental in Dubai.

It does so inside the Mandarin Oriental. That changes more than the address.

A restaurant inside a hotel is two businesses

A house on the street lives on its own dinner service. A house inside a hotel also answers to the guests upstairs, to the events downstairs and to a standard that was set before the restaurant existed. Osaka takes on both: the room that the city books weeks ahead and the service a five star hotel expects at any hour.

The hotel sets the standard. The kitchen has to meet it every night.

Who cooks

Osaka arrives with its own kitchen team and is run by the group, the same way it is run everywhere else. No franchise dropped into a lobby: the people who know the recipes are the people who open the doors.
